Mexican Stuffed Peppers

I hope everyone had a great weekend and for those of you that had today off, a nice Monday as well!   I had to work today but we got to leave a couple hours early which was a very nice and unexpected surprise.

Last night, I was planning on making my Stuffed Peppers but at the last minute I decided to change things up and try a different type of stuffed peppers.  I kept it pretty simple, so it was still very easy to make, but WOW, it turned out fantastic!  My husband thinks its even better than my original stuffed pepper recipe.  If you are in the mood for Mexican, but still want a healthy meal, I highly recommend these Mexican Stuffed Peppers.

Mexican Stuffed Peppers
Serves 4

2 Large Bell Peppers
1lb Ground Turkey
1 Large Onion Diced
1 tbsp Minced Garlic
1 tsp Olive Oil
1 10 oz can Diced Tomatoes & Green Chilies (Original Rotel)
1 4 oz can Diced Green Chilies
½ cup Corn
1.5 tbsp or 1 packet Taco Seasoning Mix
½ tsp Cumin
¼ tsp Cayenne Pepper
½ cup Shredded Cheese
Salt and Pepper to taste

Preheat oven to 350. Add the olive oil to your pan and cook diced onion and garlic over medium-high heat for 3-5 minutes. Add ground turkey and cook until completely done, stirring frequently. Turn heat to low and add diced tomatoes, chilies, corn, seasonings, and half of the cheese. Mix well and cook for an additional 3-5 minutes and then remove from heat. Slice peppers in half and remove the insides. Stuff the pepper halves with the meat mixture and top with the remaining cheese. Bake for 40-50 minutes and then broil for 2-3 minutes.
