I hope everyone had a great weekend!  I am still somewhat following Phase 1 of the 17-Day Diet and feeling really good about things.  I am currently loving this French Toast Breakfast Scramble.   I made my version with egg whites, cinnamon, stevia, vanilla, 1/2 banana, and topped with peanut butter.  I know it sounds weird, but I promise it is really good and a filling breakfast for less than 200 calories! I hope everyone had a great weekend and for those of you that had today off, a nice Monday as well!   I had to work today but we got to leave a couple hours early which was a very nice and unexpected surprise. Colonial Cup 2012

As promised here is my recipe for my Super Greens Juice.  If you are new to juicing and are looking for a recipe that is full of greens but doesn’t necessarily taste that way, this is the juice for you.  The apple and pineapple both add a nice bit of sweetness, the lemon adds some acid, but the real star is the large piece of ginger that adds a great kick of spice.  Those flavors combined together really separate this juice from your standard green juice.
